What exactly is the definition of 'aerial application'. It is listed as a privilege of CPL within Aerial work, but im struggling to find exactly what it means, even Part 61 has got me confused?

CASR Part 137 - Aerial application operations applies the common language definition as the application of materials from the air. I guess that would including spraying solutions such as defoliation or fertilizer agents or solid materials such as super phosphate from an aircraft. I would likely include 'water bombing' for bush fires. It's not easy to find a clear detailed definition though.
