Do you have or know where I could get my hands on some practice exams for the aerial application casa exam..??
Also - The CPL air law extracts you provide , would they be sufficient enough for this exam..?

I'm not sure about the practice exams. Perhaps you should try the Aerial Agricultural Association of Australia. You'll find them on google. We don't have any helicopter specific material in our hand-out for air law. The Air Law extract is used regularly by students throughout Australia so it would be adequate for your fixed-wing air law exam.
